01/30/09 Morning Weigh-In: 177.4

Seemed to have gone up about a pound although the carb levels stayed the same as yesterday. I wonder if it's sodium from the pepperoni and peanut butter pie, or maybe the cheese did it. As the day before I had cheese and dropped a lb. or so and I actually had added salt to my pork shoulder roast when I was eating it. I'm pondering maybe no cheese today and seeing how that affects the scale.

Sugar in Fruit Chart

So, I found this chart online when trying to figure out how much sugar is found in certain fruits. It's very interesting to note that two average size bananas has almost as much sugar as a can of soda! No wonder why I don't eat fruit...and a good thing at that.

And for those people that think fructose (sugar from fruit) is better for you then sucrose (table sugar) THINK AGAIN!

I'll stick to my meat, bacon, and eggs. Thank you very much.

Morning Weigh-In: 177.7

I was away for a few days hence the lack of food logs posted. I tried best to eyeball my food and log it, but I doubt I was truly accurate. Down a few lbs. this week. Almost at my goal for the month of Jan. which was 176. Only a few days to go. I'm pretty sure this month I lost the most I've ever lost in a month, 7 lbs.! That's more than I lost on induction month I think.

Morning Weigh-In: 180.7

Well, my weight has been slowly creeping up on me. I've recently increased the carbs and calories I have been consuming daily over the past 4 days or so, and I suppose that may be what is to blame. I am somewhat discouraged however, as most of my carbs that I increased are coming from more vegetables particulary cabbage which happens to have a decent amount of fiber in it. Lately, I've been feeling extremely hungry, and every 2-3 hours I'm look for something to eat again. I'm going to try to cut down my calories and see how that goes while maintaining the 40g of carbs per day and see if I can start going down again in the weight department. I seem to have the best luck it seems like when I eat "Breakfast" (technically it's not breakfast anymore by this time) after 12 pm. I'm normally not hungry in the morning, but this week I was craving food very early on, something not too normal for me. I suppose I need to figure out if it is better for me to eat my first meal early on, no matter what, or if I should just wait it out until a certain time until I'm hungry. I need to find a food staple that is both low or no carb and low calorie that I can shovel away withaging my diet if I become unbearably hungry. I'm thinking possibly a nice salad with just a few diff. kinds of lettuce and some dressing. Lettuce seems to be fairly low carb for a few cups, and it is definitely low calorie.

Rounding a Corner...

This morning I weighed in at 178.9, my lowest weight to date. I'm sure some of this might be due to fluid loss due to having some alcohol last night. However, it's rewarding to see the scale at less than 180 lbs. Especially since I had plateaued around 184 for a few weeks around Christmas. I've got approx. 18 more lbs. to lose until goal weight of 160 lbs. which I'd like to make by April 1st.

American Silk Peanut Butter Pie

I tried this recipe for "American Silk Peanut Butter Pie" from the LowCarbFriends.com recipe room. This pie wasn't too too bad, although I've had better low carb peanut butter pies. This just was not peanut buttery enoughy for me. It didn't hold up too well without a crust either. I eat mine plain, but the recipe recommended whipped cream or splenda/cocoa powder topping. You could make this with a low-carb pie crust as well, I'd choose to just save my carbs/calories though and have it crustless.

American Silk Peanut Butter Pie
Ingredients: 1 cup butter, softened
1 1/2 cup splenda
6 Tablespoons of peanut butter
4 eggs
How To Prepare: Cream butter, peanut butter and splenda until smooth and creamy. Add 4 whole eggs--one at a time beating five minutes between each egg. Fill pie plate or individual serving dishes. Chill for several hours.
Nutrition Info: Makes 8 servings; 328 calories, 31.6 g fqt, 7.1 g carbs, 6.4 g protein

Carbs in Splenda

The following is information I found detailing the true carbs & calorie counts for splenda. This was found thanks to Katherine of LowCarbFreedom.com who emailed Splenda for the information and then posted the info. on her site.

Carbs & Calories in:
SPLENDA Granular Sugar Substitute
1 tsp = 0.5 g carb, 2 calories
1/2 cup = 12 g carbs, 48 calories
1 cup = 24 g carbs, 96 calories

Packet of SPLENDA
1 packet = .9 g carbs, 4 calories

The Beginning

I've decided to start a blog about my low-carbing endeavors. This will be the place I'll document articles and information about low carbing, as well as my trials, tribulations, progress, food, and any other pertinent information relating to a low-carb lifestyle. Currently, I weight approx. 182 lbs. My only specific goal in mind is looking the best I can. I would like to cut down to approx. 160 lbs., see how I look and feel and then re-evaluate my situation. My goal is to lose those 20 lbs. in approx. 4 months. That is approx. 5 lbs a month, not an unreasonable feat. I started on a low-carb diet around Nov. 1st, 2008. After a small bump in the road around Christmas, I am determined to stay on track now.
